We’ve
invited Charlie Moore, owner of Seasons Harvest in Harbert, Michigan to provide some
recipes for carefree Beach Coast entertaining. He was inspired to create these recipes with friend Nancy
Watson, for easy, quick and delicious summer entertaining around the grill. The
Seasons Harvest line of products: barbeque sauces, salsas, condiments and
dessert sauces, were inspired by summers spent on Moore’s grandfather’s
Michigan farm—and are fresh, natural and tasty. All Seasons Harvest products are available at the Harbert
location or online. Most of these
recipes can be made ahead, to free up time to spend with friends and family
celebrating the glorious Beach Coast summer.
Joe’s
Shrimp and Dill
2 c. cooked shrimp, chopped
½ c. chopped red onion
½ c. chopped celery
1 oz. cream cheese
½ c. Seasons Harvest Joe’s Mustard
Salt, pepper and dill to taste
Mix all ingredients well and serve with crackers or crostini for a refreshing appetizer. May be made ahead and chilled.
Cheyenne Pecans
2 tbsp. Seasons Harvest Cheyenne Rub
1 egg white
1 tbsp. water
3 c. pecans or other unsalted, raw nuts
Preheat oven to 350. In a small bowl, beat egg white with water and stir in nuts until well coated. Place in paper or plastic bag with the Cheyenne Rub and shake until well coated. Spread on baking sheet lined with aluminum foil and bake at 350 for 30 minutes or until brown.
Rosted Sesame Eggplant
Delicious as a side dish for lamb burgers or a grilled leg of lamb.
1 medium eggplant peeled and cut into 1 inch cubes
Seasons Harvest Extra Virgin Olive Oil (approximately ¼ c.)
½ c. Seasons Harvest Tomato Basil Pasta Sauce
¼ c. chopped fresh parsley
¼ c. toasted sesame seeds
Salt and pepper to taste
Mix eggplant with enough olive oil to coat lightly. Spoon into glass baking dish and bake at 350 for 20-30 minutes or until soft. Cool and then mix with rest of ingredients.
Spicy Corn on the Cob
Legends Chipotle for Beef Barbeque Sauce
6 ears of corn
Clean and de-silk corn. Drop into boiling water for 3 minutes. Remove from water and brush with Legends Chipotle for Beef Barbeque Sauce. Serve warm.
May also be brushed on corn before grilling for a deliciously charred ear of corn.
Chocoloate Mini Muffins
1 c. Seasons
Harvest Chocolate Overture Dessert Topping
4 eggs
Beat eggs and stir in the chocolate sauce until well mixed Fill mini muffin tins ¾ full and bake at 350 for 10 minutes. Remove from tins when cool and top with fresh fruit in season if desired.
Makes about 20 muffins.
